Breakfast foil packs are a fantastic way to enjoy a delicious and satisfying morning meal, whether you're camping, hosting a backyard brunch, or simply looking for a hassle-free breakfast option. These convenient foil packs allow you to combine all your favourite breakfast ingredients into a neat package that cooks to perfection, resulting in a mouthwatering meal that's easy to enjoy on the go.
To create breakfast foil packs, start by preheating your Pit Boss Pellet Grill. While it's heating up, gather your ingredients and prepare your foil packs. Using heavy-duty aluminum foil, cut out square sheets large enough to accommodate all the ingredients and provide room for folding and sealing. The foil serves as a cooking vessel, ensuring that all the flavours meld together and the ingredients cook evenly. Carefully place the foil packs on the grill and let them cook for approximately 15 to 20 minutes, or until vegetables are tender. Once the vegetables are tender, crack one egg into the center of each foil packet and continue cooking until the eggs are cooked to your desired doneness.
Serve the breakfast foil packs directly from the foil or transfer the contents to plates or bowls. The beauty of breakfast foil packs is that they can be enjoyed right away or easily transported for a picnic or outdoor adventure. Cleanup is a breeze. Simply discard the foil packs and enjoy the rest of your day without the hassle of washing multiple dishes.

Ingredients:
3.5-4 cups frozen hashbrown potatoes, thawed
½ medium onion, diced
1 red bell pepper, diced
Salt and pepper, to taste
8 breakfast sausages, divided
4 eggs
4 (12x12) large heavy duty foil sheets
Directions:
Preheat your grill to 400ºF (204ºC).
In a large bowl, combine the hashbrowns, onion, red bell pepper, salt, and pepper. Mix until well combined. Divide your ingredients evenly between the four sheets of foil, arranging them in a pile right in the centre. Place two pieces of breakfast sausage on top of each pile.
To fold the packets, bring the two longest edges towards each other and roll them together to create a seal. Then, fold in the sides, leaving enough space for the steam to circulate a little. Ensure the packets are sealed that nothing leaks.
Place the foil packs seam-side up on the grill and grill for about 20 minutes or until the vegetables are tender. Once the vegetables are tender, give the ingredients a gentle stir and crack an egg into the center of each packet and sprinkle the eggs with salt and pepper. Loosely tent the foil over the eggs and cook for about 5 minutes or until desired doneness.
Remove the foil packs from the grill and open the packets carefully as they will release hot steam and serve with your favourite condiments.
