Caramelized Mushroom and Tamarind Pizza
Let’s make a caramelized onion and tamarind pizza in my new Salton Indoor Pizza Oven from Home Hardware. Pizza is my weakness, and there's nothing like a delicious homemade one. This oven safely reaches the perfect pizza-cooking temperature of 800F and features 15 pre-programmed cooking functions. My pizza cooked in the oven in just under 3 minutes, achieving a restaurant-quality taste.

Directions:
Balsamic Glazed Pears
Combine Ingredients:
In a small saucepan over medium heat, mix balsamic vinegar, honey, and a pinch of salt.
Stir occasionally and simmer gently until the mixture thickens (about 3-5 minutes).
Add Pears:
Add thinly sliced pears to the saucepan.
Coat the pears evenly with the balsamic glaze.
Cook for an additional 2-3 minutes until the pears are just tender. Remove from heat.
Pizza time!
Preheat and Grease:
Preheat the Salton Pizza Oven to temperature, 800°F (Wood Fire Pizza setting)
Grease a large baking sheet generously with olive oil.
Caramelize Onions and Mushrooms:
Melt butter in a large skillet over medium heat.
Add onions and cook until translucent (2-3 minutes).
Pour in water or white wine, add salt and pepper, and cook for another 5 minutes.
Mix in 2 tbsp of tamarind sauce, wild mushrooms, and herbs.
Cook for an additional minute until the liquid evaporates, and onions are caramelized. Set aside.
Prepare Kale:
In a large bowl, combine chopped kale with 1 tsp of tamarind sauce.
Drizzle a bit of olive oil and add red pepper. Massage the kale and set aside.
Assemble Pizza:
Roll out 1/3rd of room temperature pizza dough into a thin circle.
Transfer the dough to the oiled baking sheet.
Drizzle olive oil over the dough, then top with fontina cheese, prepared kale, and the caramelized mushroom and onion mixture.
Sprinkle shaved parmesan cheese on top.
Bake and Enjoy:
Bake for 3 minutes or until the crust is golden brown and the cheese is bubbly.
Serve immediately and enjoy!
