Homemade Turkey Gravy

Every good turkey deserves a good gravy, or in this case a great gravy! This rich turkey gravy recipe features roasted turkey neck, veggies and fresh thyme, all imbued with fall flavour of wood-fired apple. 

Pellets: Traeger Apple BBQ Wood Pellets 

Ingredients (Serves 8) 
  • 1 turkey neck 
  • 4 celery sticks, roughly chopped 
  • 4 large carrots, roughly chopped 
  • 2 large onions roughly chopped 
  • 8 cloves of garlic, smashed 
  • 8 sprigs of thyme 
  • 4 cups chicken broth 
  • 1 teaspoon cracked black pepper 
  • 1 teaspoon salt 
  • 1 stick of butter 
  • 1 cup all-purpose flour 
Turkey Gravy
Steps: 
  1. Set your Traeger Pellet BBQ to 175˚C / 350˚F and preheat for 15 minutes with the lid closed. 
  2. Place your turkey neck, vegetables, garlic and thyme in a large roasting pan. Season with salt and pepper and add 4 cups of chicken stock. 
  3. Place your prepped turkey on the roasting pan and cook for 3-4 hours or until the breast reaches 70˚C / 160˚F. The turkey will continue to cook once off the grill to a final internal temperature of 75˚C / 165˚F. 
  4. Strain the drippings into a small saucepan and simmer on low heat. 
  5. In a larger saucepan whisk together flour and butter (cut into 8 pieces) to make a roux. Stir until golden tan (about 8 minutes of constant stirring). 
  6. Whisk your drippings into the roux and bring to a boil then remove from heat. 
  7. Season with salt and pepper to taste and serve piping hot over your bird and trimmings!
